1. Preheat the oven to 350F.
2. In a large bowl, whisk together the flour and salt. Add the cold butter and crumble with a pastry blender or your fingers. Add the cold water, one tablespoon at a time, until the dough comes together into a ball (about 3-4 tablespoons). Place the dough on a piece of parchment paper. Then top the dough with another piece of parchment. Roll the dough into a large circle. You'll need to pull up the edges of the dough, so don't roll it so thick that it's impossible to peel away from the parchment. Remove the top parchment paper. Transfer the crust (still on the bottom parchment paper) to a baking stone or cookie sheet.
3. Make the filling by gently combining the pear, apple, honey, flour, and spices. Pour the filling into the center of the galette, until the filling covers most of the crust. Leave about an inch of space from the outside of the crust to fold over the filling.
4. Fold the edges over.

1. Start by making the pastry. Add the flour, salt, and sugar to a food processor and pulse and few times to blend everything together.
2. Add in the cubed cold butter and pulse until the butter is pea and lima bean-sized. Add the bourbon and water and mix just enough so it lightly comes together. It will still look loose but will stick together when you squeeze a chunk of it in your fist.
3. Pour the dough out onto a well-floured surface and form it into a loose disk. Wrap in plastic wrap, and chill for at least 1 hour.
4. While the dough is chilling, start your filling.
