1. Cook the onions on a low heat until golden brown. Then add the garlic, bell pepper and cabbage and cook with the onions for a minute.
2. Add the sauerkraut, lemon juice, chicken stock, thyme, oregano and salt and cook for 10 minutes over medium heat with the lid on the pan.
3. Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit).
4. Place the sauerkraut mixture in an oven dish and place the sausage on top. Cover the baking dish with aluminum foil.

2. Cut each bacon strip in half and place both halves in the bottom of each muffin cup of a 12-cup muffin pan. Transfer the pan to the oven and cook the bacon for 15 to 18 minutes. Remove the bacon from the oven, drain the excess fat from the bottom of each muffin cup and set it aside.
3. Lower the oven temperature to 375°F (190°C, or gas mark 5).
4. Use your hands to squeeze all the excess liquid from the thawed spinach and put an equal amount of the spinach on top of the bacon in each muffin cup.
