Regarding Luke Selby's column on parsnips, I would like to pass on a tip. He mentions the sweetness can sometimes be cloying. I mash cooked parsnips and turnips together so that the bitterness of the turnips offsets the sweetness of the parsnips. The result is delicious and I use this instead of mashed potato as I am nightshade intolerant.
