1. Heat the oven to 350°F.
2. Slice the zucchini lengthwise. With a spoon or melon baller, remove the pulp from the zucchini; coarsely chop the pulp and set aside. Rub the zucchini halves, inside and out, with 1 tbsp oil, then sprinkle each side with salt and pepper. Lay the zucchini, cut side up, in a baking dish. Transfer to the oven and bake 15 minutes.
3. Heat a saute pan over medium high heat. Add the remaining tbsp of oil and heat until it shimmers. Add the sausage to the pan and cook, stirring frequently to break up the pieces, until the fat is rendered the sausage is no longer pink, 5-6 minutes. Add the zucchini pulp to the sausage and saute, stirring occasionally, until the pulp releases most of its water content, 6-7 minutes.
4. Add the onion and bell pepper; saute, stirring occasionally, until the onion is translucent, 6-7 minutes. Add the italian seasoning and garlic and saute, stirring frequently, 1 minute more. Stir in the spinach and toss frequently until it barely wilts.

1. Place an oven rack on the center shelf, then preheat the oven to 400 degrees Line a sheet pan with parchment paper or foil.
2. Set a large skillet over medium-low heat. Add the sausage and cook, using a spatula to break up the meat into small pieces, until fully cooked (Notes: you can turn the heat up to medium once there’s fat in the pan. Will take around 5-6 minutes, or 10-12 with a nonstick skillet). Drain any excess fat through a fine mesh strainer and discard, then set aside to cool.
3. Slice the zucchini in half lengthwise. Use a melon baller to scoop out the center of the zucchini. The more zucchini you remove, the more room there will be for filling. However, the zucchini tastes great with the filling, so there's no need to go overboard. Place the zucchini on the prepared sheet pan and sprinkle lightly with salt and pepper.
4. In a medium-sized bowl, combine the sausage, poblano pepper, onion, garlic, oregano, parsley, mozzarella, parmesan, breadcrumbs, salt and pepper. Give it a good stir to make sure all the breadcrumbs don’t fall to the bottom.

1. Place a rack in the upper third of your oven. Preheat to 425 degrees F.
2. Halve the zucchini lengthwise, scoop out the seeds, and discard the seeds. Then, scoop out the soft center flesh to create shallow zucchini “shells,” with walls about 1/2 inch thick, reserving the center flesh. Arrange the zucchini shells in a baking dish. Roughly chop the center flesh and set it aside.
3. Heat 1 tablespoon olive oil in a skillet over medium-high heat, then add the sausage, onion, and bell pepper. Using a wooden spoon or heatproof spatula, break apart the sausage, sautéing it together with the vegetables, until the onions are soft and the sausage is browned and fully cooked, 5 to 8 minutes. Stir in the salt, pepper, and red pepper flakes.
4. Add the garlic and tomato paste and cook 1 additional minute, until tomato paste is broken down and incorporated. Add in the reserved zucchini flesh and heat through for 1 minute, then remove from the heat. Taste and add additional salt, pepper, or red pepper flakes as desired.
