Chickpea Protein Cookie Dough

Listing Results Chickpea Protein Cookie Dough

I know the chickpea cookie dough concept isn’t new, but this one is, because it uses peanut butter powder and protein powder instead of normal peanut butter and a ton of liquid sweetener. This is the key to making it a low fat and high protein cookie dough! The rest of the ingredients are pretty simple too; 1. Chick…See more on haylskitchen.com

    1. To the bowl of a food processor fitted with a steel blade, add all of the ingredients in the order listed, except for the chocolate chips: the chickpeas, peanut butter, oats, baking powder, cinnamon, salt, maple syrup, and vanilla. Process until smooth, creamy, and completely combined. Stop and scrape down the bowl several times as needed. Depending upon your food processor, this may take several minutes and several scrape downs.
    2. Taste the “dough.” If you’d like it sweeter, add additional maple syrup 1 teaspoon at a time, until it is as sweet as you like. Transfer the dough to a mixing bowl and fold in the chocolate chips (You also can attempt to mix them directly in the food processor bowl, but I find using a separate bowl is easier and more effective in the end). Enjoy immediately or transfer to an airtight container and refrigerate until ready to serve. You can also bake the dough as cookies. See blog post above.

    1. Open a can of chickpea, drain and measure 1 1/8 cup (or weight 200g/7 oz), which is usually what you get for a regular 400g/14 oz can of chickpea.
    2. Place the chickpea on a clean towel and place another towel on top. Massage to dry the chickpea and loosen the chickpea skin.
    3. Peel off the skin of each chickpea, it is time-consuming but believe me, it makes the cookie dough way better. Simply squeeze each chickpea between your thumb and index to easily peel off the skin. Discard all skin.
    4. Place the chickpeas in a food processor with the S blade attachment.
