1. Rinse, drain, and thoroughly dry jackfruit. Chop off the center "core" portion of the fruit and discard. Place in a mixing bowl and set aside.
2. Mix together BBQ seasoning and add to jackfruit. Toss to coat.
3. Heat a large skillet over medium heat. Once hot, add 1-2 Tbsp oil of choice and seasoned jackfruit (use more oil, as needed, if increasing batch size). Toss to coat and cook for 2-3 minutes to achieve some color.
4. Add BBQ sauce and thin with enough water to make a sauce. Stir and reduce heat to low- medium and cook for about 20 minutes (up to 35 minutes on low for a deeper flavor).

1. Place all the ingredients for the BBQ Sauce into a medium, oven-safe saucepan with fitting lid. Mix until fully combined and bring to a boil, then lower the heat and simmer uncovered for about 30 minutes, stirring from time to time, until the sauce reduced by about half and is much darker in color.
2. Meanwhile, shred the jackfruit into little pieces with your fingers. Do not discard the core or seeds as they are perfectly edible and even add to the overall texture of the mixture.
3. Once that's done, preheat your oven to 325°F.
4. Heat a few tablespoons of oil in a large saute pan set over medium-high heat. Once hot, add the onions, garlic and salt and cook until softened and slightly browned, about 3 minutes. Crank up the heat to high, add the shredded jackfruit and cook until it starts to brown and caramelize, about 10 minutes.

1. For the Jackfruit: Rinse, drain, and thoroughly dry the canned jackfruit. Using kitchen shears, cut up the pieces of jackfruit a bit. It will break up in the pan, but this step helps. In a medium-sized bowl, mix together the dry barbecue seasonings, add the jackfruit and toss to combine.
2. In a large skillet, add mild oil and heat to medium. Once oil is hot, add the onion and cook until just beginning to caramelize. Add the garlic and cook until fragrant. Add the seasoned jackfruit and cook for 5 miutes, until it begins to get some color. Begin to break it up with the back of a spoon. It won't break up completely here but just kind of soften apart.
3. Remove the jackfruit from the heat and let cool until you can touch it with your hands. Using your hands or two forks, start to pull apart the jackfruit to shred it. Some of the smaller pieces won't shred, that is totally fine. They're still tender and will be great.
4. Start with one cup of barbecue sauce and mix with the shredded, seasoned jackfruit. Add more if you want the mixture more "saucy". Cook, stirring, just until heated through.
