1. Rinse, drain, and thoroughly dry jackfruit. Chop off the center "core" portion of the fruit and discard. Place in a mixing bowl and set aside.
2. Mix together BBQ seasoning and add to jackfruit. Toss to coat.
3. Heat a large skillet over medium heat. Once hot, add 1-2 Tbsp oil of choice and seasoned jackfruit (use more oil, as needed, if increasing batch size). Toss to coat and cook for 2-3 minutes to achieve some color.
4. Add BBQ sauce and thin with enough water to make a sauce. Stir and reduce heat to low- medium and cook for about 20 minutes (up to 35 minutes on low for a deeper flavor).

1. The first step is to prepare your jackfruit. begin by coating your knife with some oil before cutting into the fruit (re-apply as needed)
2. Next, you need to cut your jackfruit. There are a few methods of cutting into a jackfruit. I've tried them all, and you can get pretty great results with a majority of methods. For this recipe, I decided to slice large 1 1/2-2" slices from the jackfruit. This makes each section manageable to remove the pods, seeds and leftover fibrous flesh and skin.
3. Separate the different parts of the jackfruit into different bowls; the fruit pods, seeds and the remaining flesh of the jackfruit* . For this recipe you'll be using the fruit pods so you can set everything else to one side for now.**
4. Thinly slice the onions and sauté them in a big pan for 2-3 minutes with a little oil.
