1. Preheat your oven to 400F (200C). Lightly grease a baking pan.
2. Drain and rinse the jackfruit. Cut the jackfruit into smaller pieces by cutting it from core to the edge for the most pulled texture (see photos).
3. Add the olive oil to a large frying pan or skillet over medium-high heat, and when hot add the onions and garlic. Sauté until the onions are tender and beginning to brown, about 5 minutes. Add in the chopped jackfruit and vegetable broth. Cover and continue to cook another 8 to 10 minutes, until the jackfruit is soft enough that it can be mashed. Mash the jackfruit with potato masher, until it breaks apart and looks pulled or shredded.
4. To finish the jackfruit spread in an even layer across the baking pan and then pop it in the oven for 15 minutes. Remove from oven and pour over 1/2 cup BBQ sauce and stir to combine. Toss it back in the oven for about 10 minutes, until it looks delicious and golden and even a few strands get a bit burnt. Remove from the oven and if desired stir in the remaining 1/4 cup of BBQ sauce to make it even saucier.

1. Place all the ingredients for the BBQ Sauce into a medium, oven-safe saucepan with fitting lid. Mix until fully combined and bring to a boil, then lower the heat and simmer uncovered for about 30 minutes, stirring from time to time, until the sauce reduced by about half and is much darker in color.
2. Meanwhile, shred the jackfruit into little pieces with your fingers. Do not discard the core or seeds as they are perfectly edible and even add to the overall texture of the mixture.
3. Once that's done, preheat your oven to 325°F.
4. Heat a few tablespoons of oil in a large saute pan set over medium-high heat. Once hot, add the onions, garlic and salt and cook until softened and slightly browned, about 3 minutes. Crank up the heat to high, add the shredded jackfruit and cook until it starts to brown and caramelize, about 10 minutes.

2. Meanwhile, in small bowl, whisk together the mayo, vinegar, lemon juice, and pepper. Place the cabbage/slaw in medium bowl and toss with the dressing to coat. Add a small dash of maple syrup if needed but be careful not to add much, as the jackfruit will be sweet from the BBQ sauce.
3. Use two forks to "pull" the jackfruit pieces apart. Stir in the drained beans. Cover and cook another 30 minutes to 1 hour. Keep warm until ready to serve.
4. Serve jackfruit on buns with the slaw, a slice of avocado, and pickles.
