1. In a large pan (with lid), fry the chorizo slices for a few minutes to release their oils then add the onion, garlic and pepper and cook until soft.
2. Stir in the rice, tomato puree and smoked paprika and give it a stir.
3. Pour in the chicken stock, pop on a lid and simmer for 15 minutes.
4. Add the prawns and peas and cook uncovered for 5 more minutes. Season and serve with fresh lemon wedges.

2. Using the same pan, add some cooking spray or spray oil then fry the onion for a few minutes until softened.
3. Add the chopped garlic and cook for a further minute, then add in the red pepper and chilli and stir fry for 2 minutes.
4. Stir the paella rice through, add the saffron and paprika, and then add the chicken stock. Simmer gently for 20 minutes.
