Ladle the pear honey immediately into prepared (sterilized jars), filling to within 1/8 inch of the tops. Wipe jar rims with a clean cloth. Add the sterilized lids and rings and screw bands tightly. Place jars on elevated rack in canner pot. Lower rack into canner.
