1. Mix all ingredients, except vegetable oil and wonton skins, together in a bowl. Use a spoon or your hands to combine the ingredients.
2. Put 1 teaspoon of pork mixture in the center of a wonton wrapper. Moisten the edges of the wonton wrapper with water, and fold to form a triangle. Seal and pinch corners together to make dumplings.
3. Heat vegetable oil in a large skillet or cast iron pan over medium high heat. When oil is hot, almost bubbling, add wontons in batches, being careful not to crowd the pan.
4. Fry in batches in bubbling oil until golden brown and cooked through, then remove and drain on a plate lined with paper towels.
