Instead of jalapeños, feel free to use other types of chili peppers in this jelly. Also, try a variety of colors: Try red, yellow, or orange chilis, according to your preferred level of heat. You can also make this jelly milder by replacing part of the jalapeños with green bell pepper (e.g. 5 jalapeños to 1 medium green bell pepper).
Reduce heat until temp is 220 F, then sprinkle in pectin and continuously stir so it doesn’t clump up. Cook for 2 minutes stirring intermittently to allow mixture to thicken. Turn off heat and remove pot. Allow to pepper jelly recipe to cool, skim off foam, and then store in jars or pour over cream cheese as an appetizer.
While the jalapeños are simmering, combine 1 tablespoon water and the gelatin in a small cup. Let bloom for 5 minutes. Remove the cooked jalapeños from the heat. Add the gelatin and stir until well dissolved. Pureé the jelly with an immersion blender until smooth.
