1. Press the sauté button then add the oil and allow it a minute to heat up. Once the oil is hot, add the cumin seeds and serrano pepper to the pot. When the cumin seeds turn brown, add the remaining ingredients (I don't even bother mixing).
2. Secure lid, close the pressure valve and cook for 4 minutes at high pressure.
3. Open the valve to quick release any remaining pressure.
4. Mix well, garnish with cilantro and serve.

3. Fry the potatoes till they are cooked through, turn the potatoes few times while frying. Take out potatoes with a slotted spoon (this allows excess oil to drip back into the frying pan) and place on a paper towel.
4. Test the oil again with a piece of eggplant. Fry the eggplant pieces same way.
