1. Preheat oven to 350 degrees. Spray a pie plate with baking spray. I use a 9 inch pyrex baking dish. (I sprinkle sesame seeds on the bottom of the pie plate so the crust doesn't stick to the bottom.)
2. Finely chop the unsweetened baking chocolate and put in a microwaveable bowl. Heat on high 30 seconds at a time until almost melted. The residual heat from the bowl should take care of melting the rest.

3. If you have made a homemade pie crust, please allow it to cool before making this recipe.
4. Use a whisk attachment for your mixer if possible. Whisk together the sugar free chocolate pudding mix and the milk until it appears to be 'fluffy' and blended. This takes about 2 - 2 1/2 minutes. Then add one cup of the whipped topping. The remaining topping will be used to top the pie after it has firmed up.
5. Place the pie into the refrigerator and allow to firm for at least 45 minutes. Also, refrigerate the remaining topping for half that time just to keep it cool.Top your pie with the remaining the whipped topping and optional chocolate shavings or chips

1. Preheat the oven to 350°F. In a large mixing bowl, combine the almond flour, granulated monk fruit sweetener, cocoa powder, coconut oil, vanilla and coffee. Stir the mixture together until it is well-combined. It should be dry enough to crumble in your hands. (If it appears too wet, add 1-2 tablespoons of extra almond flour.)
2. Pour the crust mixture into a standard sized pie dish. Using your hands or a rubber spatula (I do a combination of both), work the dough out from the center, pressing it as you go, and moving it up the sides of the dish to form the crust. Clean up the edges and try to keep the crust uniform- the crust should be about 1/4" thick all around.
3. Bake the crust for 10 minutes at 350°F. Remove from the oven and allow it to cool for at least an hour before pouring the mousse filling into it.
4. In a small dish, combine the gelatin and the water. Stir and let it sit for a few minutes.
