Total Time: 40 minsCategory: DessertCalories: 337 per serving1. Preheat oven to 350 degrees. Spray a pie plate with baking spray. I use a 9 inch pyrex baking dish. (I sprinkle sesame seeds on the bottom of the pie plate so the crust doesn't stick to the bottom.)
2. Finely chop the unsweetened baking chocolate and put in a microwaveable bowl. Heat on high 30 seconds at a time until almost melted. The residual heat from the bowl should take care of melting the rest.

Total Time: 1 hr 5 minsCategory: Dessert, Party, SnackCalories: 23 per serving3. If you have made a homemade pie crust, please allow it to cool before making this recipe.
4. Use a whisk attachment for your mixer if possible. Whisk together the sugar free chocolate pudding mix and the milk until it appears to be 'fluffy' and blended. This takes about 2 - 2 1/2 minutes. Then add one cup of the whipped topping. The remaining topping will be used to top the pie after it has firmed up.
5. Place the pie into the refrigerator and allow to firm for at least 45 minutes. Also, refrigerate the remaining topping for half that time just to keep it cool.Top your pie with the remaining the whipped topping and optional chocolate shavings or chips

2. Whip the heavy cream until stiff peaks form. This will be added to the chocolate pie filling later on. Set in the fridge and keep cool as you make the rest of the filling.
3. Next, heat a small sauce pan to medium low heat. Add the keto friendly sweetener (monkfruit) and eggs.
4. Stir the egg and sugar mixture very well. Take care to stir continuously until the mixture reaches 160 degrees F. This step brings the eggs to a high enough temperature to kill any bacteria. When the eggs and sure have reached the proper temperature remove from heat and set aside.
