1. Line an 8-inch or 9-inch square baking pan with parchment paper or wax paper. Set aside.
2. Add dates and peanut butter to a food processor. This is the food processor that I use. Blend until you get a somewhat cohesive, sticky and crumbly mixture, like chunks of wet sand/dough. This will take about a minute. Scrape down the sides of the processor as needed.
3. Add in peanuts, vanilla and salt (if using). Blend until the peanuts are fully-incorporated and you get a soft, crumbly mixture, with a few small bits and pieces of peanuts still visible. It’s ready when you can pinch the mixture between your fingers and it holds together when you release it.
4. Pour this mixture into the prepared baking pan. Using a rubber spatula, press down and smooth into a tightly-packed, even layer.

1. In a small mixing bowl, stir together the powdered peanut butter, water, maple syrup, vanilla, cinnamon and salt. Stir in the fiber powder, oat bran, peanuts, mini chocolate chips and sunflower seeds. If the mixture looks too sticky, stir in a Tablespoon or two more oat bran. If it’s not sweet enough for your liking, add a packet or two of stevia (or sweetener of choice). If you’re using all oat bran, you’ll need to add a Tablespoon or two of water or maple syrup (one at a time) until the mixture sticks together.
2. Line a 9x5x3 loaf pan or a small rectangular pyrex dish with parchment paper. Scoop the mixture into the prepared pan and pat it down flat. Set in the fridge for 2 hours. Cut into bars and enjoy!
