This Peach Blueberry Galette is a rustic fruit tart that you can make in no time. Juicy summer fruit mildly sweetened with coconut sugar and baked in a buttery homemade galette dough makes the most impressive dessert. Serve it warm with a scoop of ice cream or a dollop of creme fraiche for the best summer dessert.
Preheat oven to 400°. Toss peaches, blueberries, cornstarch, lemon zest, cinnamon, and ⅓ cup (67 g) sugar in a large bowl. Unwrap dough and roll out on a lightly floured sheet of parchment to a 12" round. Arrange fruit on top, leaving a 1¼" border. Lift dough edges up and over fruit, pleating as needed.
You should get an imperfect pastry circle of 10-inch/26 cm. Transfer dough with the bottom parchment to a baking sheet. To assemble the galette, wash peaches. Then, cut them along with the skin into thin slices. Mix almond flour with granulated sugar and scatter this mixture in the center of the dough, forming a circle of about 9-inch/23 cm.
If you don’t have blueberries, you could make this low carb galette with other berries or even a mixture of them. A strawberry galette is on my next list of pastry making to try.
