1. Rinse the fish fillets and blot dry with a paper towel. Season with salt and pepper.
2. Heat butter in wide sauté pan over medium low heat. Once butter has begun to foam, place the fish into the pan.
3. Add garlic. Sauté 1 minute without disturbing the fish.
4. Tilt the pan toward you and using a spoon, ladle the garlic butter over the fish. Continue to sauté while basting the fish for 2-3 minutes.

1. In a large saute pan, heat up the olive oil to medium high. Sprinkle salt and pepper over the cod filets then brown them in the skillet on both sides. About a minute or two just to give them color.
2. Take out the cod and set aside. Turn the heat down to medium and add in the broth, tomato paste and anchovy paste. Whisk to combine and then add the garlic, tomatoes and olives.
3. Simmer for 5 minutes, then add in the cod, cover and cook for 5 minutes or until the cod is cooked.
4. Serve as is, or over cauliflower rice or zucchini noodles.
