If you would like to try correcting a thin divinity, beat in a little bit of powdered sugar at a time until the consistency is drier and thicker, before dropping onto sheets of waxed paper again to dry. We recommend that you test your candy thermometer before each use by bringing water to a boil; the thermometer should read 212°.
