Mamoul cookie can be made with semolina, farina, plain flour or a combination. It can be filled with dates or nuts, but the most famous filling is the dates. In this tutorial I will show you how to make authentic maamoul, various traditional fillings and which flour to use. Ma'amoul is done in two stages separated by 8 hours or up to 3 days.
Place the filled and shaped cookies onto a parchment-lined baking sheet, 1 inch apart. Bake the cookies for 25 minutes, rotating the baking sheet once during cooking. Remove the cookies when they are lightly golden brown. Let the maamoul cool completely before dusting with powdered sugar.
Fillings are either made from nuts, or my favorite which is a lovely date filling. The shape of the finished maamoul will give you the clue as to the filling. Like most great recipes, everyone makes Maamoul slightly differently.
Maamoul dough must be pliable enough that it doesn’t crack when shaped. But if the dough is too soft, it will not hold its shape and can be difficult to release from a mold.
