2. In a separate mixing bowl, combine sour cream, yeast, and sugar. Mix until well combined and let sit while yeast dissolves.
3. Add yeast mixture into the flour mixture along with the vanilla and egg yolks. Mix dough together by hand until it is well combined. Split dough in half and wrap up in either plastic wrap or wax paper. Refrigerate 2-3 hours or overnight.
4. Right before dough comes out of refrigerator, combine ingredients for filling. Set aside.

3. Bake for 9-11 minutes, until the edges are just slightly golden, but the centers look a bit under-baked. The walnut filling will shift to one side while baking. Remove from the oven and immediately (while the cookies are still hot) use a spatula to fold the cookies in half over the walnut filling.
4. Allow the cookies to cool for 5-10 minutes, then dust liberally with powdered sugar. Store in an air-tight container until ready to enjoy!
