Hello Dad in the kitchen :), I don’t have much practical experience with semolina for cooking bread dumplings because coarse flour is widely available here in the Czech. But I’ve researched a bit and found out that a mix of semolina and plain flour should work fine. Some US people use plain flour only (all-purpose flour) and get good results.
