The other striking thing about hoki is that the flesh surrounds seams of fat. Don't be confused into thinking this seam is ugly and useless. It is chocker full of omega 3 goodness, so much so that hoki is now being used to produce fish oil as an excellent new source for omega 3.
There are no bones in hoki though it's not a very white flesh fish like flathead or snapper. I don't mind it for Thai fish cakes or parcels that you bake in foil in the oven (bit of fish sauce, lime juice, coriander, sweet chilli). I prefer hoki battered And a nicer tasting fish for grilled, it's plain but theres nothing wrong with it at all.
