Let the kernels pop for 4-5 minutes until almost all of the kernels have popped and then shut the burner off.**. Make sure to let the pan sit with the lid on for a minute or two after you think the kernels are done popping, I promise you there will be a few late bloomers that will still go off, showering your kitchen floor in popcorn.
    3. In the meantime heat maple syrup in a small pan over medium-high heat until it starts to foam/boil. SImmer for 2-4 minutes. Pour maple syrup over popcorn and combine quickly. Add cinnamon, salt and combine well. Spread onto a lined baking sheet and bake in the oven for about 30-35 minutes. Take out of the oven and set aside. The kettle corn will crisp up as it cools down.
