2. In a large bowl, whisk together almond flour, coconut flour, guar gum, gelatin and baking soda. Add Swerve Brown Sugar and whisk vigorously until evenly incorporated. (I use my hands to break up any lumps.)
3. Add melted butter, vanilla extract, molasses and egg. Combine by hand until a sticky dough forms. Add chocolate chips and work them into the dough evenly. Form dough into a ball.
4. Place your ball of dough onto a parchment paper lined baking sheet. Press dough out into a circular shape, about 7-8 inches in diameter using your hands to cup the sides to make the circle nice and tidy.

5. Preheat your oven to 180C/355F.
6. In a large mixing bowl, add the almond flour, erythritol, coconut flour, baking powder, and salt. Mix well.
7. Add the butter and eggs, and mix to a sticky dough.
8. Split the dough in half, place one half between 2 sheets of parchment paper and roll our 5mm/0.25in thick. Using a saucepan lid and a circle cutter, cut out a thick ring and remove the excess dough. Repeat to make a second cookie ring. Use the leftover dough to make mini cookies for decorating your cake.
