1. Preheat the oven to 170C Fan. Lightly grease a baking tray using the cooking oil spray.
2. Place the apples, raisins, cinnamon and stevia into a bowl and mix by hand.
3. Lay out a sheet of the filo pastry and lightly spray it with the cooking oil. Lay another sheet on top and repeat this process until you have used all of the 6 filo pastry sheets.
4. Arrange the apple mixture lengthways evenly along the centre of the pastry to within 2-3cm of each edge. Fold the two shorter edges over the filling and then roll the sheets up to form a log shape.

2. Remove the apple, drain off any excess water and measure out 60g (half a cup) of cooked apple (save the rest for another day!).
3. Mix the mincemeat with the apple and set aside.
4. Take the wrap and fold it into 3 equal sections. Press firmly so you can see the marks when you unfold it.
