    1. Line a cookie sheet with parchment paper. Set aside.
    2. Dump the chow mein noodles into a large bowl. Set aside.
    3. Melt the white chocolate in a double boiler by filling the bottom pot 1/2 way with water, bring to a boil then reduce heat. Place top pot or heat proof bowl over top and toss the white chocolate inside. Melt the chocolate, while stirring it consistently, until it's smooth. Remove the pot from the heat. Remember that white chocolate burns easily, especially if you use white chocolate chips. You can add a little oil or shortening to the white chocolate if it isn't loosen up enough. Honestly, I prefer the white baking chocolate and NOT white chocolate chips.
    4. Toss half of the mini marshmallows into the white chocolate and mix until mostly smooth.
