Total Time: 1 hr 55 minsCategory: Healthy Chocolate Chip Cookie RecipesCalories: 161 per serving1. Melt butter in a medium, heavy saucepan over medium heat; cook, stirring occasionally, until the butter begins to turn golden brown and smells nutty, 6 to 8 minutes. Remove from heat and let cool, uncovered, for 10 minutes.
2. Transfer the butter to a large bowl. Add brown sugar and granulated sugar; beat with an electric mixer on medium speed until well combined, 2 to 3 minutes. Add eggs, 1 at a time, beating on low speed until just incorporated after each addition. Add vanilla; beat until just incorporated.
3. Sift all-purpose flour, whole-wheat flour, baking soda, baking powder and 1/2 teaspoon salt together in a medium bowl. Gradually add the flour mixture to the butter mixture, beating on low speed until incorporated, about 2 minutes, stopping to scrape down sides of bowl as needed. Using a spatula, stir in chopped chocolate until combined. Let the dough rest, uncovered, at room temperature for 20 minutes.
4. Meanwhile, preheat oven to 375°F. Line 3 baking sheets with parchment paper.

2. Line a baking sheet with parchment paper or a silicone baking mat, set aside.
3. In a large bowl, combine the almond flour, coconut flour, xanthan gum, baking powder, and sea salt. Whisk together to combine and break up any lumps. Set aside.
4. In a small stainless steel saucepan, melt 4 tablespoons of the butter over medium-low heat until it browns, about 2-3 minutes. Do NOT walk away from this. Stir to make sure you can see the brown bits at the bottom. If you use a dark-coated saucepan, it can be difficult to see how brown it’s getting. Once the butter is a toasty brown and smells like toffee, immediately turn off the heat and add in the 4 tablespoons of the cold butter to stop the butter from cooking and eventually burning. Transfer the brown butter to a small bowl to cool slightly.

Total Time: 2 hrs 32 minsCategory: CookiesCalories: 205 per serving1. Cook butter in a medium saucepan over medium heat, stirring often, until it foams up and then browns. This should take about 6–8 minutes. Don’t take your eyes off it because no one wants burnt butter bits in their cookies. Remove the pan from the heat and allow it to cool for 15 minutes.
2. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer or wooden spoon (yes, you can mix this dough by hand) combine the sugars, salt and cooled brown butter. Mix until smooth.
3. Add in the eggs and vanilla and mix until combined.
4. Stir together the flour and baking soda and gradually add it to the butter mixture. Mix until it just comes together, but don’t overmix. Fold in the chocolate of your choice. The chocolate chips may not seem to adhere to batter very well due to the melted butter, so I like to place the dough into a gallon zip-top bag and kind of roll the dough into a log to push the chips into the dough while it chills.
