Once chilled, separate the dough into two. Cover the 2nd ball and put it back in the fridge.

Low and slow is the trick here, I like to simmer for 1 1/2-2 hours on super low heat. You may need to add additional broth up to 5 cups depending on how large you cut the potatoes and how long you simmer the mixture.
4. Taste and adjust seasoning as needed.
