1. To make the vegan mincemeat, simply combine all mincemeat ingredients in a saucepan on the stove over medium-low heat. Simmer for around 30-40 minutes until the mincemeat mixture is thick and very sticky. Make sure to stir it once in a while.
2. Leave the mincemeat mixture to cool while you make 1 recipe of my Vegan Pie Crust. You will probably have extra pie crust left over, but that is okay!
3. Preheat oven to 425F
4. Roll out your pie crust until it is about 2-3mm thick. Use a cookie cutter or a circular glass to cut out rounds big enough to completely fill the Mince Pie Tin or a mini muffin tin. You want to make sure that each hole is filled with the thin layer of dough. If you want to crimp the edges, you can do so!

1. Put a shallow mince pie pan or a muffin pan in the fridge to chill. You need a total of 16 holes. (see recipe notes). If you use a muffin pan the mince pies will be deeper and you will only get 6 to 8 pies from this recipe.
2. Make the pastry for the pie crusts. Add the flour, salt, coconut oil/butter and sugar to a food processor and pulse until it looks like breadcrumbs.
3. Add the water one tablespoon at a time until it just start to ball up as the blade goes round. As soon as it starts, stop the food processor. Over working it will make the pastry tough.
4. Test that you can squeeze it together into a pliable dough. Add a tiny bit more water and process again if it's too dry, or if it's ok then remove the blade, bring the dough together and turn out onto a floured surface.

2. Add chopped coconut oil and cut it into the flour with two knifes. Here is a handy guide to making shortcrust pastry that I follow. Once the mixture is uniform and there are no large lumps left (to check, shake the bowl lightly, they will come to the surface), rub the small bits of oil into the flour with your fingers until there are no lumps left. Yes, I know, it does take some time! Finally add in ice cold water and mix it into the flour mixture with a cutlery knife to distribute the water evenly. The exact amount of water needed depends on the absorbency of your flour but start off with 75 ml / 5 tbsp and add a tiny bit more at a time, if needed - too much water makes more a tough pastry.
3. To check if more water is needed, grab a handful of mixed dough with your hands, if it is very dry, add a little more water, mix it in and check again.
4. Once the dough is the right consistency, form it into a flattened ball quickly - handle the dough as little as possible, wrap it in cling film and chill for 30 minutes.
