  • Stephanie Kay Nutritionhttps://kaynutrition.com/apricot-pistachio-oatmeal-cookiesApricot Pistachio Oatmeal Cookies - Stephanie Kay NutritionThese apricot pistachio cookies are a great make-ahead treat and I actually think they taste better the day after. They also store very well in the freezer, so go on a make that double batch you want.Total Time: 45 minCalories: 289 per servingServings: 12DirectionsDirectionsStep1Preheat oven to 350° F.Step2In a food processor, add the 1 and 3/4 cups of the rolled oats. Pulse the oats until they are ground into a flour. Once completed, add them to a large mixing bowl, and the remaining 1/4 cup of rolled oats.Step3Add the cashews to the food processor and grind them into a meal, about 1-2 minutes. You want to ensure your cashews are raw and unsalted. Add ground cashews to mixing bowl.Step4Add baking powder, sea salt, cinnamon and stir well to combine into the flour mixture.Step5To the dry mixture, add the melted coconut oil, honey, egg and vanilla extract. Stir well to ensure the dough is well combined, and add in pistachios and chopped apricots.Step6The dough might seem a little dry at first, but it will be fine.Step7Allow the dough mixture to sit for 10 minutes to ensure liquid is well absorbed, and as the coconut oil cools down the dough will stick together much better.Step8Line a baking sheet with parchment paper and using a 1/4 cup of the dough mixture form into cookies and line the baking sheet.Step9Bake for 15 minutes or until cookies are golden brown on the edges.Step10Allow to cool before eating, and enjoy!IngredientsIngredients2 cupsRolled Oats1 cupRaw Cashews1 teaspoonCinnamon½ teaspoonBaking Powder½ teaspoonSea Salt1 tablespoonVanilla Extract¼ cupHoney½ cupCoconut Oil (melted)1 Egg½ cupPistachios (roughly chopped)½ cupDried Apricot (diced)See moreNutritionalNutritional289 Calories17 gTotal Fat19 mgCholesterol29 gCarbohydrate128 mgSodium5 gProteinFrom kaynutrition.comRecipeDirectionsIngredientsNutritionalExplore furtherApricot Pistachio Oatmeal To Go Recipe Quaker Oatsquakeroats.comApricot Oatmeal Cookies Amy's Healthy Bakingamyshealthybaking.comChewy Apricot Oatmeal Cookies - Baking Envybakingenvy.comApricot Oatmeal Cookies Recipe - BettyCrocker.combettycrocker.comJessica's Pistachio Oat Squares Recipe - Love and Lemonsloveandlemons.comRecommended to you based on what's popular • Feedback

    1. Preheat the oven to 350F and cover a cookie sheet with parchment paper or a nonstick pad.
    2. Add the flours, sugar, salt and baking soda to a large mixing bowl. Use a fork or whisk and stir gently until combined.
