1. Rinse 1 kg apples (7 to 8 medium-sized apples) very well in water using a colander. Drain all the water. Then peel each apple.
2. Heat a heavy kadai or pan and keep the heat to medium-low. Add 2 tablespoons ghee in the kadai and let it melt.
3. Then add sugar. Tangy apples will require more sugar. So amount of sugar to be added depends upon the sweetness of the apples. mix well.

1. Heat ghee in a pan on medium heat. Add cashews and almonds and saute just till it becomes light. Add raisins. Saute for few seconds. Transfer this to a plate and keep it aside.
2. In the same pan add grated apples and sauté till juice from the apple is released and then evaporated completely.
3. Now add the sugar and continue to sauté. Once the sugar is added, the mixture loosens up and appears moist. Continue to cook till the liquid evaporates. (For more details check out the video just above recipe maker)
4. Add cinnamon powder, cardamom powder, and mix. Cook for 1 more minute.

1. In a non-stick pan, melt the butter on medium flame. Add chopped almonds and cashews. Once it starts turning light golden in color add chopped apples and raisins and saute it continuously for about 6 to 8 minutes or until till just tender.
2. Add sooji or semolina and saute on medium flame for 4 to 5 minutes stirring continuously till you get a nice aroma. Make sure you do not burn them.
3. To the sauteed sooji / semolina, add boiling water and mix continuously on medium to low flame for 2 minutes so that there are no lumps. For better results you can use whisk while adding water. Semolina can spill out easily, so make sure the flame is low while adding hot boiling water.
4. Next add sugar and continue cooking for another 2 to 3 minutes stirring continuously.
