1. Line a loaf pan or square pan with parchment paper. Place 3/4 cup of the peanuts in an even layer on the bottom and set aside.
2. In a saucepan and on low heat, combine the butter and sugar substitute. Once the butter has melted and sugar has dissolved, hold the candy thermometer into the center of the saucepan. Stir the mixture continuously, until the thermometer reaches 300F (hard crack) and remove from the heat. Continue stirring, to ensure the butter/sugar mixture doesn't separate.
3. Pour the toffee over the peanut butter and let sit for 5 minutes. After 5 minutes, top remaining 1/4 cup of peanuts over the top. Refrigerate until firm. Once firm, break apart into pieces.

2. Measure out your butter, peanuts, baking soda, and vanilla extract. Set these aside but keep them nearby. It’s important to have these ready before you begin as once your candy reaches the necessary temperature you will need to move quickly.
3. Combine sugar, water, corn syrup, and salt in a medium-sized, heavy-bottomed saucepan and stir occasionally, using a damp pastry brush to wipe any sugar crystals from the side of the pot, over medium heat. Continue to cook until sugar is dissolved and mixture comes to a boil. This will take time (10 minutes +), don't rush the process by turning up your heat or you will ruin your brittle.
4. Once mixture is boiling, attach your candy thermometer (make sure the bottom of the thermometer isn’t touching the bottom of the pot!) and stir occasionally until temperature reaches 250°F (121°C).
