1. Place the cubed pears in a greased large slow cooker and put the rest of the ingredients right on top of the pears.
2. Cover and cook on high for 4 hours, no mixing required at this time.
3. After 4 hours, remove the lid and mash the pears a bit before carefully transferring into a large blender. Blend the mixture until completely smooth, about 30 seconds.
4. Add the mixture back into the slow cooker with the cover slightly ajar and cook on high for another 3-4 hours until thick, mixing every 30 minutes or so. (It thickens more after cooking as it cools).

1. Preheat oven to 375 F. Grease a 9x13 baking dish (or similar size) using vegan butter, coconut oil, or baking spray.
2. In a medium bowl, add the pear slices, vegan butter, coconut sugar and 1/4 teaspoon cinnamon. Mix together and transfer to the baking dish.
3. In the same medium bowl (no need to wash!), add the oats, coconut flakes, flour, pecans, coconut oil, maple syrup and remaining 1/4 teaspoon cinnamon. Stir with a spoon and then transfer the mixture onto the pears in an even layer. Press down with the back of the spoon to flatten.
4. Bake uncovered for 35 minutes at 375 F, or until browned and bubbling. If making the Vegan Caramel, you can do that while the pear crisp is baking. Remove from oven and set aside to cool. Store this Pear Crisp in an airtight container in the fridge for 3-4 days (but best served immediately).
