1. Preheat oven to 325°F. Line a large baking sheet with parchment paper or greased foil. Set aside for later.
2. Add all ingredients to a large bowl. Using a rubber spatula, fold until clusters form and mixture is well mixed.
3. Pour onto the prepared baking sheet. Using the rubber spatula, gently nudge granola into an even layer, making sure to keep clusters intact. Create empty pockets at regular intervals to let air through to crisp up the granola.
4. Bake for 15-20 minutes—until granola clusters are just solid enough to flip. Using a heatproof spatula, gently flip granola, making sure to keep clusters intact. Bake for an additional 5-10 minutes, until edges are a deep golden brown and granola is just slightly soft. Mine took a total of 25 minutes. Granola will crisp up while cooling.

1. Preheat the oven to 325°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside for later. You can also use this Energy Bar Mold to make rectangular granola bars with crispy exteriors.
2. Add all dry ingredients to a large bowl: nuts, oats, strawberries, cranberries, blueberries, flaxseed, and salt (if using). Stir until well mixed.
3. Add all wet ingredients to a medium bowl: coconut sugar, coconut oil, almond butter and maple syrup. Whisk until well incorporated.
4. Pour wet ingredients over dry ingredients. Using a rubber spatula, stir and fold until very well mixed.

5. Toast your oats and almonds in a 350-degree F (176 C) oven for 13-15 minutes or until slightly golden brown.
6. Process dates in a food processor until small bits remain (about 1 minute). It should form a “dough” like consistency (mine rolled into a ball).
7. Place oats, almonds and dates in a large mixing bowl. Add seeds and set aside.
8. Warm agave and peanut or almond butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates to disperse throughout. Use a spoon or your hands to thoroughly mix.
