1. Preheat the oven to 170ºC and grease a muffin tin with butter or non-stick cooking spray and dust lightly with flour.
2. In a medium bowl, mix the olive oil, sugar, lemon zest, vanilla and egg.
3. Grate the courgette using the medium side of a cheese grater. Squeeze the excess water out of the courgettes over the sink and add to the bowl. Mix the ingredients well. A wooden spoon is all you need.
4. Mix in the dry ingredients- the flour, salt, baking powder and bicarb of soda. No need to sift everything together.

2. Line a muffin tin with 12 muffin cases.
3. Sift 100g self raising flour, 60g rye flour, 40g cocoa powder, 1 tsp baking powder and 1/2 tsp bicarbonate of soda together. Add any bran left in the sieve to the bowl and stir in. Set aside.
4. Place 50ml vegetable oil, 100ml honey or maple syrup and 1 egg (or flax egg*) into a mixing bowl. I use a stand mixer but you can do this with a handheld mixer or by hand with a wooden spoon. Beat well for 2 minutes.
