A trick is used here to prepare super crispy, soft and tasty uddina vade or medu vada. In this recipe uddina vade is prepared using soaked urad dal and home made roasted rice flour. You guessed it right..that is the trick. Preparing home made roasted rice flour is very easy.
Wet your hands Now start shaping the vada. Push edges to form an even rounded shape as much as possible If you find it difficult to shape the vadas, just make uddina bonda (rounds). They will taste the same Take urad dal in a bowl, wash it a couple of times and discard the water Soak in fresh water for 2 to 3 hours only. Do not exceed 3 hours
Giving shape to the vada is a real challenge!!!!! Wash and Soak urad daal/Black gram seeds for 3 to 4 hours or overnight. Chop ginger, green chillies, curry leaves, coriander leaves in to very small pieces. Drain all the water from soaked urad dal and grind it along with salt, green chilly in to smooth fluffy mixture.
