In a small bowl, mix together soy sauce, mirin, garlic powder, onion powder, and brown sugar. Place sliced tofu in a shallow dish and add in the soy sauce mixture. Allow the tofu to marinate for at least 1 hour or overnight for more flavor.
2. If you are using a rice cooker, you can move on to the next step. Place rice in mixing a bowl, rinse the rice by swirling the rice in water, and pouring it off, repeat this 2 or 3 times until the water is clear. Pour off excess water and place the rice in a large pot, add 2 cups of water, and place over high heat. Bring to a boil, uncovered. Cook for 15 minutes and remove the pot from the heat. Cover the pot and allow the rice to finish cooking for 10 minutes.
3. As you wait for the rice to finish cooking, mix together the rice vinegar and sugar in a small bowl. Heat in the microwave on high for 30 to 45 seconds. Stir the mixture to make sure that all the sugar has been dissolved. Transfer your cooked rice into a large mixing bowl, and add the vinegar mixture. Mix it in thoroughly with the rice to make sure each grain is coated. Allow the rice to cool to room temperature before using.
4. Coat a large skillet with spray oil and place it on medium heat. Remove tofu from marinade and cook each side for 5 minutes, or until you see the tofu start to caramelize, repeat on the other side. Set the tofu aside until it is cooled to room temp.

I started by cutting the block of tofu in half (to create two wider blocks, not longer blocks, if that makes sense!). Press the tofu using a tofu press, or allowing to sit, sandwiched between paper towels and a heavy book on top for pressure. Press for about 20-30 minutes, or longer if possible! This allows for better texture and more water to be released.
2. Once tofu is pressed, slice into pieces about an inch thick, and shape rectangles into spam shape, roughly 2 inches by 4 inches and round off the corners if desired.
3. Prepare the teriyaki sauce by whisking together all sauce ingredients and allow tofu to marinate in the sauce. Again, the longer the better, for maximum flavour absorption! I recommend at least 30 minutes to an hour, but if you’d like to, you can also let sit in the fridge overnight.
4. When tofu is ready, you can choose to pan fry tofu with any remaining sauce, until golden brown, and all the sauce is absorbed. Otherwise, you can bake at 375F in the oven on a nonstick baking mat for about 10 minutes on each side, brushing with leftover marinade as you flip.

Put several more layers of paper towel on top, then place a cutting board on top of that. Weight the cutting board down with something like several cans of food or a book and let the tofu press for at least 30 minutes (preferably several hours).
2. While the tofu is being pressed, prepare the marinade for the tofu. Mix the vegetable broth, tamari, maple syrup, liquid smoke, tomato paste, mirin, fresh ginger, and garlic in a small saucepan and bring to a simmer over medium heat. Remove from the heat, let it cool slightly, then strain through a fine mesh sieve and discard the solids.
3. Once the tofu has been pressed, cut it into 4 slabs. Place the musubi mold on top of one of the slabs and use a paring knife to trim the tofu around the outside of the mold. Repeat with the remaining 3 slabs. Put the slabs of tofu in a sealable container and pour the marinade over them to coat them, then seal the container. Let the tofu marinate, in the refrigerator, for several hours.
4. Preheat the oven to 400 degrees Fahrenheit. Carefully remove the slabs of tofu from the marinade and gently shake off any excess marinade. Lay the tofu on a baking sheet lined with parchment paper. Bake the tofu in the preheated oven for 15 minutes, then gently turn the pieces over, brush the tops with more marinade, and bake for another 8 minutes. Remove from the oven and let cool.
