1. Combine the apples, pears, apple juice, ground cinnamon, and fresh lemon juice in your Instant Pot give it a stir to combine. Add the lid and lock it into place. Switch the vent to Sealing and set the “Manual” or Pressure Cook setting to 4 minutes.
2. When the cook time has completed, allow pressure to release naturally for 10 minutes, then manually release any remaining pressure by venting.
3. Let cool slightly and taste for sweetness. Add maple syrup to taste. Transfer the mixture to a food processor or blender and blend until smooth. You can also use an immersion blender for a chunkier style sauce.
4. Combine the apples, pears, apple juice, ground cinnamon, and fresh lemon juice in your slow cooker and give it a stir to combine. Cover and cook on high for 4 hours, stirring once or twice.
