Stir. At this point all the cheese should be melted. Microwave 3o more seconds until uniform and gloopy (it should look like cheese fondue at this point). Mix in the egg and baking mix. You will need to dump it onto wax paper and knead it by hand to thoroughly incorporate the ingredients or you can do this in a food processor with the dough blade.
2. Press the dough out on parchment paper into a piece about 8 x 11 inches.
3. Preheat panini press. This only takes a few minutes.
4. Spray the panini press with cooking spray and carefully put the dough on the press. Close the lid. Cook for about 5-7 minutes until the dough is golden. Remove and cool. Cut into 3 or 4 pieces. Slice each through the center. The dough in the center is still undercooked. By slicing it through the center and inverting the pieces to make the sandwich you can completely cook the dough on the panini press.
