    1. Toast the sesame seeds until golden in a medium saucepan. Reserve ½ teaspoon of them in a small bowl. Add the brown rice to the seeds in the pan with a pinch of salt and 300ml of boiling water. Add the spring onions and peppers, and stir-fry over a high heat for 2 minutes before adding the mangetout and garlic. Stir-fry for 1 minute, then add the prawns and bamboo shoots. Stir the sauce and add to the pan. Cook for 2-3 minutes until the prawns are cooked through and the sauce has thickened to coat – if it’s looking too thick, add a splash more water.
    4. Stir a few drops of sesame oil into the cooked rice and serve with the stir-fry, with the reserved sesame seeds sprinkled on top.
