Once the ghee is heated, add cashews and almonds to it. Roast them both for at least a minute and then transfer the roasted almond and cashews to a bowl and keep them aside.
2. Now, take the same pan and again add a tablespoon of ghee in it. Put in the lotus seeds and shallow fry them over a medium to light flame for a good 5 to 6 minutes until they turn crispy. After the lotus seeds are done frying, transfer them to the same bowl where sauteed dry fruits were kept (Step 1). Using a grinder jar, coarsely grind almonds, cashews and lotus seeds together.
3. Next, put a kadhai and preheat 1 cup of ghee in it. Add wheat flour and roast it for 6 to 7 minutes or until you observe a golden coloured flour. To it, add crushed pistachio, cardamom powder, water melon seeds and melon seeds. Roast for another 5 minutes or so. Then add the mixture of ground almond, cashew and lotus seeds. While stirring frequently, roast the entire amalgamation for a good 6 to 7 minutes. Remove from heat and mix sugar to the result. Let the mixture cool down and your panjiri is all set to be enjoyed.

3. Add 2 tbsp foxnuts (makhana) to the same pan and roast until crisp on medium heat. Keep stirring continuously. Once done, remove on the same large plate in which we took the puffed gond.
4. Add another tsp of ghee to the same pan and roast 5-6 whole almonds, 5-6 whole cashew nuts, 5-6 whole pistachios, 1 tbsp melon seeds, ½ tbsp flax seeds, and 2 tbsp sliced dried coconut until they are slightly browned. Once done, take them out on the plate.
