1. Let salmon rest at room temperature for 15-20 minutes. While they’re resting, preheat oven to 450°F and line a medium baking pan with foil or prep an oven safe cast iron pan and set aside.
2. Next, prep the marinade. In a small bowl, whisk together the honey, coconut aminos (or soy sauce), garlic and lime juice. Set aside.
3. After resting, pat salmon dry with a paper towel and place skin-side down on prepared baking sheet or pan and season with salt and pepper. Coat each salmon filet with the prepared glaze, leaving some left to drizzle after baking.
4. Bake in the pre-heated oven for 15-18 minutes or until the center of the thickest filet reads 135-140°F. Turn the oven to broil and broil for 2-3 minutes or until the salmon gets a little crispy on top.

1. Preheat oven to 400 degrees and grease a large baking pan. Arrange salmon fillets on the baking sheet and season generously with salt and pepper.
2. Stir together olive oil, garlic, herbs, and juice of 1/2 lemon. Spoon over salmon fillets being sure to rub all over the tops and sides of the salmon so it has no dry spots. Thinly slice remaining 1/2 of lemon and top each piece of salmon with a slice of lemon.
3. Bake for 15-18 minutes until salmon is opaque and flaky when pulled apart with a fork. You can broil the last 1-2 minutes if desired.
4. Garnish with fresh thyme or parsley if desired and serve.
