1. In a small bowl, stir together warm water and yeast. Set aside for 5-10 minutes. The softened yeast should look slightly foamy.
2. Meanwhile, in the large bowl of a stand mixer fitted with the dough hook, combine oats, sugar, shortening and salt. Pour scalded milk over the oat mixture. When the oat mixture has cooled to lukewarm, add the yeast mixture.
3. Gradually add the flour, ½ cup at a time, just until the mixture pulls away from the edges of the bowl in a soft ball of dough – do not add too much flour. Knead for about 8-10 minutes, or until the dough is smooth and elastic.
4. Transfer the dough to a greased bowl and turn to coat the dough on all sides. Cover and let rise in a warm place until doubled in size, 1 - 2 hours.

1. In a medium bowl, combine the bread flour, oats, kosher salt, and shortening. Set aside.
2. In a large mixing bowl (or the bowl of a standing mixer), add water and yeast. Let stand 3 to 5 minutes. Stir in the egg, molasses, and half of the flour mixture. Beat on medium speed for two minutes or by hand until smooth. Stop the mixer. Add the remaining flour mixture and beat (or stir) again until smooth, 1-2 minutes. Scrape down batter from sides of bowl. Cover and let rise in warm place until doubled, 30 to 40 minutes. To check if the dough is ready, press it lightly with two fingers; if the indentation remains, the dough is ready.
3. Grease a 9x5-inch or an 8 1/2 x 4 1/2-inch loaf pan. With a wooden spoon or your hand, gently press down the dough in the bowl with repeated strokes (about 25 total). Spread the batter into the prepared pan (it will be thick and fairly sticky), then tap the pan on a counter several times to remove any air pockets. If using a 9x5-inch pan, let rise until the batter comes within 1 inch of the top of the pan; if using an 8 1/2 x 4 1/2, let rise just until batter reaches the top of the pan, about 30 minutes. Preheat your oven to 375 degrees F.
4. Bake loaf for 40-50 minutes, until well browned on sides and top. The bread should reach an internal temperature of 190 degrees F and sound hollow when tapped. Remove from pan and let cool on a wire rack. Slice and serve.

1. Preheat oven to 350°F. Grease and line an 8 x 4 inch baking loaf pan with parchment paper. If you don't have this size baking pan see notes for other options.
2. In a large mixing bowl add oat flour and baking powder. Whisk until baking powder is evenly incorporated into the flour. If desired, you can also mix in 1/2 tsp salt. This will not affect the bread texture but will add a little more flavor to the bread. If you are trying to make a sweet bread, don't add the salt.
3. Add in the yogurt. When adding in the yogurt, make sure to not drain out any of the liquid from the yogurt that may be at the top. You want to use that liquid in the bread. Use a spatula to slowly add the yogurt into the batter. Keep folding in the yogurt until it is evenly and completely incorporated. Your dough should be very thick and very sticky.
4. Scrape your dough into the prepared baking pan. Use the spatula to help evenly spread the dough across the pan. Dampen your fingers with a tiny bit of water and then lightly press on the surface of the bread to smooth out the dough. If desired, sprinkle about 1 tbsp of rolled oats across surface and gently press the oats slightly into the surface of the bread so that they stick when baking.

1. For a 2 lb loaf, please use the 2 lb ingredient list and set the bread machine settings to 2 pound loaf, light color and “basic” bread options. For a 1.5 lb loaf, please use the 1.5 lb ingredient list and set the bread machine settings to 1.5 pound loaf, light color and “basic” bread options. FYI - Make sure not to confuse the 1.5 lb & 2 lb ingredient amounts and machine settings!
2. Unplug the bread machine & then remove the bread pan.
3. Add all ingredients starting with the milk into the bread machine “bucket” (loaf pan). Make sure the yeast is last and does not touch the milk or salt. Some people like to make a small "divot" on top of the flour in order to hold the yeast in one spot before the machine starts.
4. Place the bread pan (with ingredients) back into the bread machine.
