DirectionsStep1Preheat oven to 350F. Line two large cookie sheets with parchment paper or grease two large cookie sheets with butter.Step2In a large bowl, use a fork or a whisk to cream together the melted butter and the sugar, until they are well combined and the butter is no longer separated from the sugar. This will take a couple of minutes, keep sti…Step3Add 2 eggs and vanilla extract, and whisk together until fully combined.Step4Add the flour, baking powder, salt, and cinnamon, and whisk together.Step5Add the oatmeal. Using a fork, mix everything together really well.Step6Add the craisins and the pecans, and mix them into the cookie dough.Step7Using a tablespoon measure, place neat mounds of cookie dough about 2 inches apart on your cookie sheet. Gently press down a bit to flatten them just a little.Step8Bake 10-12 minutes, or until the cookies start to turn golden brown around the edges and are fully cooked. I think that the cookies that were nicely caramelized on the bottom tasted the best.Step9Remove from oven, and allow to cool for at least 5 minutes before using a spatula to remove them from the cookie sheet. If you try too soon they will crumble and fall apart!IngredientsIngredients14 tablespoonsUnsalted Butter (1 stick + 6 tablespoons, melted, see notes)1 cupLight Brown Sugar (dark brown can be used)2 Eggs (see notes)1 teaspoonVanilla Extract½ cupAll-Purpose Flour (or white whole wheat flour)1 teaspoonBaking Powder1 teaspoonGround Cinnamon½ teaspoonSalt3 cupsQuick Oats (aka 1 minute, or instant oats)⅔ cupCraisins (see notes)⅔ cupPecans (chopped, optional)See moreNutritionalNutritional99 Calories5 gTotal Fat19 mgCholesterol14 gCarbohydrate77 mgSodium2 gProteinFrom babaganosh.orgRecipeDirectionsIngredientsNutritionalFeedbackThanks!Tell us more

    2. In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. Whisk until blended. Pour the liquid mixture into the flour mixture and stir just until combined. The dough will be wet and sticky. Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and let chill for at least 30 minutes or up to 3 days.
    3. When ready to bake, place a rack in the center of your oven and preheat the oven to 350 degrees F. Line a large rimmed baking sheet with parchment paper or a silicone baking sheet. Remove the dough from the refrigerator (if it is very stiff, you may need to let it sit out for 5 to 10 minutes). With a cookie scoop or spoon, drop the dough into 1 1/2-inch balls and arrange on the baking sheet, leaving 1 inch of space around each. With your fingers, gently flatten each cookie to be about 3/4-inch thick.
    4. Bake until the cookies are golden and firm around the edges and set on top, about 9 to 10 minutes. Place the baking sheet on a wire rack and let the cookies cool on the baking sheet for 2 minutes, then transfer the cookies to the rack to cool completely.
