1. Pound each of the beef slices with a mallet to flatten and tenderize. Place beef slices in a bowl and pour in soy sauce and lemon or calamansi juice. Mix well and then cover. Marinate for at least an hour.
2. Separate the beef pieces from the marinade and squeeze any excess liquid. Reserve the marinade for later.
3. Lay a piece of beef flat on a cutting board, one long side facing you. Arrange each of the fillings on top of the meat on the end close to you the gently roll the meat to the other end, enclosing the filling inside.
4. Secure the roll by tying it with kitchen twine at 1-inch intervals. Dredge the roll in flour. Repeat this with the remaining beef slices.

1. Combine the flank steak with the flank steak marinade in a large bowl. Cover the bowl and place inside the refrigerator. Marinate for 1 to 3 hours.
2. Lay the marinated flank steak in a plate. Assemble the stuffing in the middle. Start by lining the carrot sticks, sweet pickle sticks, sliced chorizo, and egg. Make sure that the stuffings are close to each other. Roll the flank steak from one end to another to cover the stuffing. Use a kitchen twine to tie the meat. This will seal the stuffing inside. 3. Meanwhile, heat the oil in a frying pan.
4. While the oil is starting to heat-up, dredge the rolled flank steak (morcon) in flour. Make sure that the entire piece is coated.

3. Slice the steak into 6 x 5 inch pieces. Put a slice of beef frank, pickle, carrot, and wedged boiled egg in one side of the steak. Roll the steak until a cylindrical shape is formed. Secure by tying a kitchen twine. This will be your beef morcon. Set aside. Perform this step until all the steak is consumed.
4. Heat 5 tablespoons of oil in a pan. Dredge the rolled beef morcon in all-purpose flour. Pan-fry all the sides for 1 minute or until it turns light to medium brown. Set aside.
