1. Heat the oil in a medium sauté pan over medium-high heat. Add the onions and cook until soft, about 5-6 minutes. Add garlic and 2 tablespoons of chopped rosemary and stir. Immediately add in the ground lamb, salt and pepper. Stir occasionally until meat is cooked through, about 8-9 minutes. Drain away any excess fat.
2. Place cut potatoes in pot filled with cold water. Add salt. Turn heat to high and cover slightly. Once boiling uncover and drop heat to medium-high. Cook until you can pierce potatoes easily with a fork, about 10-15 minutes.
3. Preheat oven to 425°F

1. Cover potatoes with cold water in a large pot and add 1 teaspoon of salt. Bring to a boil and cook for 15 minutes or until just tender. Drain and mash with ¾ cup broth, 3 tablespoons olive oil, 1½ teaspoons salt and several grinds of black pepper, to taste.
2. While potatoes are cooking, preheat oven to 400ºF. Heat 2 teaspoons olive oil in a large (preferably cast iron) skillet, over medium heat. Cook lamb (or other ground meat), stirring, until it loses its pinkness. With a slotted spoon, transfer to a bowl and pour off fat from the skillet.
3. Add 2 tablespoons olive oil to the skillet. Cook onions, carrots and bell pepper over medium heat, stirring occasionally, until fairly dry and starting to brown, 5-7 minutes. Add garlic and zucchini and cook, stirring, for a minute or so. Return lamb to the skillet. Add 1 cup broth, 3 tablespoons tomato paste, ½ teaspoon thyme, 1 teaspoon salt, black pepper and cayenne to taste, and bay leaf. Simmer over medium-low heat for 5 minutes, stirring occasionally. Stir in the corn and peas and remove from heat. Correct the seasoning with more salt and pepper, if desired.
4. To assemble the pie, use a spatula to smooth out the meat filling in the bottom of the skillet or casserole. Spread the mashed potatoes out evenly on top and use the tines of a fork to make swirly patterns in the potatoes, if you like.

1. Pre-heat oven to 180c/350f, and lightly grease a pie tin and set aside (see my notes for sizes and alternatives), and remove pastry sheets from the freezer to defrost.
2. Heat the olive oil (2 tsp) in a heavy-based pot over medium-low heat. Add roughly chopped brown onion (1 medium) and fry for 3 minutes or until the onion starts to soften.
3. Increase the heat to medium-high, then add lamb mince (500g/1.1lbs) and continue to fry until lamb mince is well browned and most of the moisture has evaporated and there is some nice brown colour in the base of the pot (see my notes).
4. Add roughly chopped bacon (2 rashers) and sliced button mushrooms (250g/9oz) to the lamb mixture in the pot and continue to fry for 2-3 minutes, until the mushrooms start to soften. Then add crushed garlic (3 cloves) and finely chopped fresh rosemary (1 tbsp) and fry for another minute.
