1. Cut the beef across the grain into into 1-inch pieces. Sprinkle with some salt, pepper and the flour and toss to coat the pieces. Set aside.
2. Fry the bacon in a Dutch oven or heavy pot until done then remove it with a slotted spoon, leaving the bacon drippings in the pan.
3. Working in batches and being careful not to overcrowd the pieces, generously brown the beef on all sides. Transfer the beef to a plate and repeat until all the beef is browned.
4. Add the onions and fry them, adding more oil if necessary, until lightly browned, about 10 minutes. Add the garlic and cook for another minute. Add the vegetables and cook for another 5 minutes. Add the Guinness and bring it to a rapid boil, deglazing the bottom of the pot (scraping up the browned bits on the bottom). Boil for 2 minutes. Return the beef and bacon to the pot along with the remaining ingredients and stir to combine. (**At this point you can transfer everything to a slow cooker if you prefer. Follow the remaining steps and then cook on LOW for 6-8 hours or on HIGH for 3-4 hours.)Bring it to a boil. Reduce the heat to low, cover and simmer for 2 hours. Add salt and pepper to taste.

2. Browning the meat: (feel free to skip to step 5 and add all the ingredients together instead). Set the Instant Pot to SAUTE, add cooking oil and brown the meat on all sides. Meat will not be cooked through. (Be sure not to crowd the pot - you may have to work in batches). Transfer browned meat onto a large plate.
3. Place the pot back in the pressure cooker and add onions and garlic and sauté for a minute or two then add the Guinness stout and tomato paste until just hot enough to deglaze the pot, about 1 minute.
4. Add the beef back into the pot along with potatoes, carrots, celery, Worcestershire sauce, the remaining 2 teaspoons Italian seasoning, bay leaf, beef broth and (star anise if using). Stir to combine. If there is not enough liquid to cover the vegetables, add water - only as much as needed.

1. Wash, prep and cut up all the veggies. Place the carrots, mushrooms and celery in the crockpot.
2. Trim off the fat from the meat and cut into large bite size pieces. Season the meat generously with salt and pepper on all sides. Set aside.
3. Heat up a large skillet (preferably cast iron) over high heat until hot. Add approx. 1-2 Tablespoons of oil. Let the skillet get VERY HOT. We want to SEAR the meat and brown it quickly without cooking it through.
4. Sprinkle some flour on to the beef (or use a Ziploc bag to coat) and place enough of the beef into the pan that it is not crowded. Flip after approx. 3-4 minutes or until the beef is nice and browned. Continue on all sides, putting it in the crockpot. Continue until all the beef has been browned.
