1. Add potatoes to a large pot and cover with water. Bring to a boil and cook until the potatoes are tender 12-15 minutes. Drain and set aside.
2. Meanwhile heat a large skillet over medium heat and add in bacon. Cook until golden brown and crisp. Remove from the pan to a paper towel lined plate. (Do not drain bacon grease!) Chop up bacon into bite size pieces.
3. Add cabbage and onion to the same pan the bacon was cooked in. Increase the heat to medium high to get the cabbage and the onions caramelized and tender, 4-5 minutes. Add in the garlic and cook for an additional minute. Take off the heat and set aside.
4. Mash the potatoes and add in butter and milk and continue to mash until smooth, creamy and lump free.

2. Add 2 tablespoons butter to dry pot, place over MEDIUM heat and when melted add garlic. Sauté until fragrant and add chopped cabbage. Cook, stirring, for about 5 minutes, or until softened. Season with ½ teaspoon salt and ½ teaspoon pepper. Remove from heat.
3. Add cooked potatoes back to the pot with the cabbage. Add about half of the milk, onion powder, remaining ½ teaspoon salt and remaining 4 tablespoons butter. Use a potato masher to smash the potatoes to a slightly chunky consistency (they should not be completely smooth), adding additional milk as needed.
4. Taste and season with additional salt and pepper, as desired. Crumble the cooked bacon and sprinkle over the potatoes. Garnish with green onion.
