1. Core the apples and pears, and cut into large pieces. No need to peel them. Place in Instant Pot.
2. Add all other ingredients; nutmeg, salt, lemon juice and water. Mix ingredients and top with cinnamon sticks.
3. Secure the lid and make sure vent is set to Sealing. Cook on Manual for 5 minutes. When Instant Pot beeps, allow for a Natural Release for 15 minutes.
4. At this point, you can release any remaining pressure and open the lid. Use an immersion blender to process sauce to desired consistency. Alternatively, you can move contents to a blender or food mill to process. You may have to work in batches.

1. Wash and prep all of your apples and pears. I peel the fruit because that is my family's preference. If you don't mind the skin, by all means leave it on. Core and quarter all apples and pears and toss them into the Instant Pot stainless steel bowl.
2. Add healthy choice of fat, cinnamon, lemon juice, sea salt and water into the Instant Pot stainless steel bowl with the fruit.
3. Put the Instant Pot lid on and secure it in the locked position. Plug in your Instant Pot. Make sure the vent on top of the lid is in the sealed/closed position. The Instant Pot should be turned on, you'll hear a little sound that it makes. Press the MANUAL button. The high pressure light should be red, if not, press manual again to get it to switch from low pressure to high pressure. Then press the "-" sign to decrease the time to say 3.
4. Walk away from your Instant Pot. Don't worry, it will do it's work. It will end up saying "On" for a while during the "pressure" increasing and heating process. You might see a little steam escape through the top vent area, that's okay. It will only release a little bit. Once it has started to cook, you'll see the number 3 on the screen and it will decrease as it cooks.

3. Release pressure using the natural-release method according to manufacturer's instructions, up to 15 minutes. Unlock lid. Remove and discard cinnamon stick. Pass the cooked fruit through a food mill; sauce will be slightly coarse. Blend fruit with an immersion blender for a smoother sauce.
